Ground Bison Taco Bowl with Mango Pineapple Salsa, Pickled Onions, and Guacamole

This Ground Bison Taco Bowl is a vibrant, nutrient-packed meal that’s bursting with fresh flavours, textures, and health benefits. Grass-fed ground bison, rich in protein, iron, and omega-3s, serves as the hearty base, seasoned with mild taco seasoning for a warm, savoury depth. The homemade mango pineapple salsa adds a sweet and tangy kick while providing immune-boosting vitamin C and digestive enzymes. Pickled onions bring a zesty crunch and gut-friendly probiotics, and the creamy guacamole, packed with healthy fats and fibre, adds a refreshing contrast. Paired with your favourite grain-free chips, this taco bowl is a deliciously balanced meal that nourishes your body while satisfying your taste buds.

Ingredients for the Ground Bison:

500g grass-fed ground bison

1 packet Siete mild taco seasoning (or your favourite taco seasoning)

For the Mango Pineapple Salsa:

1 ripe mango, peeled and diced

1 cup fresh pineapple, diced

2 roma tomatoes, diced

1 red bell pepper, diced

1/4 red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Sea salt, to taste

For the Pickled Onions:

1 red onion, thinly sliced

1/2 cup apple cider vinegar

1/2 cup water

1 tbsp sea salt

1 tsp honey or coconut sugar

For the Guacamole:

2 ripe avocados, mashed

Juice of 1 lime

Sea salt, to taste

Fresh cilantro, chopped (optional)

To Serve:

Grain-free chips (your favourite kind)


Method

In a small saucepan, combine apple cider vinegar, water, sea salt, and honey (if using). Bring to a simmer over medium heat, stirring occasionally until the salt dissolves. Place the thinly sliced red onion in a jar or bowl and pour the hot liquid over the onions. Let it sit for at least 30 minutes, or refrigerate for a few hours for more flavor.

Heat a large skillet over medium-high heat. Add the ground bison and cook for 5-7 minutes, breaking it up with a spoon, until fully browned. Add the Siete taco seasoning (or your preferred seasoning) and stir to combine, adding a little water if necessary to create a sauce. Simmer for 2-3 minutes, then remove from heat.

In a mixing bowl, combine the diced mango, pineapple, red bell pepper, red onion, and cilantro. Squeeze the lime juice over the salsa and season with sea salt to taste. Stir gently to combine, and set aside.

In a bowl, mash the ripe avocados until smooth or slightly chunky, depending on your preference. Add the lime juice and sea salt, and stir to combine. Sprinkle with chopped cilantro if desired.

In a bowl, layer the cooked ground bison as the base. Top with the mango pineapple salsa, a generous scoop of guacamole, and a few spoonfuls of pickled onions. Serve with a side of your favorite grain-free chips for a crunchy, satisfying addition.

Serve the taco bowl with additional lime wedges and fresh cilantro if desired. Enjoy your vibrant, nutrient-packed taco bowl!
