Ingredients

Flax egg: 1 tbsp ground flaxseed  7 g, 3 tbsp water  45 g ( 52 g) or 1 Organic egg

Melted coconut oil 1/4 cup (56 g)

Nut or seed butter 1/4 cup (64 g)

Coconut sugar 1/3 cup (67 g)

Maple syrup or honey 2 tbsp (40 g)

Vanilla extract 1 tsp (5 g)

Gluten-free oat flour 1 cup (120 g)

Gluten-free rolled oats 3/4 cup (60 g)

Baking soda 1 tsp (5 g)

Salt 1 tsp (6 g)

Vegan Chocolate chips 1/2 cup (85 g) (I love using Hu Kitchen)

Sunflower or pumpkin seeds 2 tbsp (20 g) double if following nut-free version

Dried cranberries 3–4 tbsp (30–40 g)

Chopped almonds & cashews 3–4 tbsp (30–40 g) optional


Method

Preheat the oven to 350°F (175°C) and line or grease two baking sheets. Set aside.

In a large bowl, mix together the flax egg, melted coconut oil, nut or seed butter, coconut sugar, maple syrup (or honey), and vanilla extract.

Add in the oat flour, rolled oats, baking soda, and salt. Mix well until combined.

Stir in the chocolate chips, sunflower/pumpkin seeds, dried cranberries, and chopped nuts.

Using a medium cookie scoop, drop the dough onto the prepared baking sheets, spacing the cookies evenly.

Bake for 11-12 minutes, or until the edges are golden and the centers are set. Let the cookies cool on the baking sheets for 10 minutes before transferring to a wire rack to cool completely.
