Ingredients

454 g (1 lb) ground chicken or turkey (lean, organic if possible)

5 g (1 tsp) sea salt

1 g (1/2 tsp) ground black pepper

3 g (1 tsp) garlic powder

3 g (1 tsp) onion powder

1 g (1/2 tsp) smoked paprika

0.5 g (1/4 tsp) ground sage

0.5 g (1/4 tsp) ground thyme

0.5 g (1/4 tsp) ground nutmeg 

30 g (2 tbsp) pure maple syrup

0.5 g (1/4 tsp) crushed red pepper flakes

15 g (1 tbsp) olive oil for cooking


Method

In a large bowl, combine all ingredients except the olive oil. Use your hands or a spatula to gently mix until just combined; avoid overmixing to keep the sausages tender.

Divide the mixture into 8 equal portions (about 50g each) and shape each into a patty.

Heat 1-2 tablespoons of olive oil in a large skillet over medium heat. Add the patties in a single layer and cook for 4-5 minutes per side, until golden brown and cooked through (internal temperature should reach 165°F).

Serve warm with eggs, vegetables, avocado, berries, in a breaky burrito or wrapped in lettuce for a low-carb option. These patties can also be stored in the fridge for up to 3 days or frozen for up to 3 months.
