Ingredients
Cookie Base

Almond flour: 1 cup (96 g)

Cinnamon: 1/2 tsp (1 g)

Baking powder: 1 tsp (4 g)

Himalayan sea salt: Pinch (0.5 g)

Pure maple syrup: 1/2 cup (120 mL)

Cashew butter: 1/2 cup (120 g)

Gluten-free rolled oats: 1 cup (100 g)

Cashew Caramel Filling

Dates: 1/2 cup (120 g), soaked

Pure maple syrup: 3 tbsp (45 mL)

Full-fat coconut milk: 2-3 tbsp (30-45 mL)

Vanilla extract: 1 tsp (5 mL)

Sea salt: Pinch (0.5 g)

Topping

Maldon flakey salt

Method

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a mixing bowl, combine almond flour, cinnamon, baking powder, and Himalayan sea salt.

Add maple syrup and cashew butter to the dry ingredients, stirring until a cohesive dough forms.

Fold in the gluten-free rolled oats until well incorporated.

Scoop 1-2 tablespoons of dough and roll into balls. Place on the lined baking sheet and flatten slightly with your palm or the back of a spoon.

Bake for 10-12 minutes or until the edges are golden brown.

Cool the cookies completely on a wire rack.

Prepare the Caramel Filling

Soak the dates in warm water for 5-10 minutes and then drain.

In a food processor or blender, combine the soaked dates, maple syrup, coconut milk, vanilla extract, and sea salt. Blend until smooth and creamy.

Spoon a dollop of the caramel filling onto each cooled cookie.

Top with a pinch of Maldon flakey salt for a sweet-salty finish.

Store cookies in an airtight container in the fridge for up to 5 days. For longer storage, freeze the cookies and enjoy straight from the freezer.
