Gut Loving Miso Cauliflower Soup with Bone Broth Base

This Gut Loving Miso Cauliflower Soup is a warm, nourishing blend perfect for chilly days. Rich in umami flavours from the miso and packed with the deep, restorative benefits of bone broth, this gluten-free, dairy-free soup is as nutritious as it is comforting. With tender cauliflower florets and subtle notes of ginger, it’s a soothing dish that will warm your heart and body.
Ingredients
Bone broth base: 4 cups (960 mL), homemade or store-bought
Cauliflower florets: 1 medium head, chopped (about 4 cups or 400 g)
Onion: 1 medium, finely chopped
Garlic cloves: 3, minced
Fresh ginger: 1 tbsp (6 g), grated
White miso paste: 2 tbsp (30 g)
Olive oil: 2 tbsp (30 mL)
Sea salt: To taste
Black pepper: To taste
Green onions: 2, sliced
Sesame seeds: 1 tsp
Method
In a large pot over medium heat, add the olive oil. Sauté the chopped onion for 3-4 minutes until translucent. Add the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant. Add the cauliflower florets to the pot and stir to coat with the aromatics. Season lightly with sea salt and black pepper.
Pour in the bone broth and bring to a boil. Reduce the heat and let it simmer for 15-20 minutes or until the cauliflower is tender. Using an immersion blender or carefully transferring to a high-speed blender, blend the soup until smooth and creamy.
Ladle a small amount of the warm soup into a bowl and mix in the white miso paste until dissolved. Pour this mixture back into the pot and stir well. Avoid boiling after adding miso to preserve its beneficial properties. Taste and add more sea salt or black pepper if needed.
Ladle the soup into bowls and garnish with sliced green onions and sesame seeds for an added touch of flavour and texture. Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently over the stove to maintain the delicate flavors.
