Single Serve Healthier Chocolate Chip Cookie

Indulge in a warm, gooey chocolate chip cookie that’s naturally sweetened and made without gluten or dairy. This single-serve treat satisfies your sweet tooth with wholesome ingredients, perfect for a cozy snack or dessert.

Ingredients

Cookie Base

Almond flour: 3 tbsp (25 g)

Almond butter: 1.25 tbsp (18 g)

Coconut sugar: 1 tbsp (13 g)

Maple syrup: ½ tbsp (7 mL)

Egg yolk (or 1 tbsp unsweetened applesauce): 1 yolk (15 g)

Baking soda: ⅛ tsp (0.5 g)

Sea salt: Pinch (0.5 g)

Dash of vanilla extract

Dairy-free dark chocolate (my fav is hu kitchen): 15 g

Method

Preheat your oven to 350°F (175°C). Line a small baking tray with parchment paper.

In a mixing bowl, combine the almond butter and coconut sugar and maple syrup. Mix until well combined.

Add the egg yolk (or applesauce) and mix thoroughly.

Stir in the almond flour, baking soda, and a pinch of salt until a dough forms.

Fold in the chopped dairy-free dark chocolate.

Scoop about 1-2 tablespoons of dough onto the baking tray and flatten slightly.

Bake for 10-12 minutes, or until the edges are golden brown.

Let the cookie cool on the tray for a few minutes, then transfer to a wire rack.

Top with flakey Maldon salt and enjoy this freshly made warm, gooey chocolate chip cookie!
