High Protein Coconut + Vanilla Waffles

Ingredients (Serves 2-3)
3 organic pasture-raised eggs
¼ cup full-fat coconut milk
½ teaspoon vanilla extract
1 tablespoon unrefined cold-pressed coconut oil
1 teaspoon Himalayan pink sea salt
½ teaspoon cinnamon
½ teaspoon baking soda
1 scoop PUREPALEO Vanilla Protein Powder (I like the Vanilla PUREPALEO™ by Designs for Health)
¼ cup organic coconut flour
Optional Toppings
Nut butter (almond, peanut, or cashew)
Berries (fresh or frozen)
Coconut yogurt
Cinnamon
Maple syrup (or other RSF sweeteners like raw honey)
Method
In a mixing bowl, combine the dry ingredients: coconut flour, protein powder, Himalayan pink sea salt, cinnamon, and baking soda. Whisk everything together until well combined.
In a separate bowl, whisk together the wet ingredients: eggs, full-fat coconut milk, and vanilla extract, until smooth.
Slowly pour the wet ingredients into the bowl with the dry ingredients, stirring continuously to prevent clumps from forming. Mix until a smooth batter forms.
Let the batter thicken and cool in the fridge for 10 minutes. This will help create a fluffier waffle texture.
Preheat your waffle maker according to its instructions.
Once heated, lightly grease the waffle maker with unrefined coconut oil.
Pour the batter onto the waffle maker, spreading it evenly to cover the surface.
Close the lid and cook the waffles on medium to high heat until golden brown and fluffy, about 5 minutes (adjust cooking time based on your waffle maker’s instructions).
Carefully remove the cooked waffles from the waffle maker and transfer them to a plate.
Top with your choice of toppings such as nut butter, berries, coconut yogurt, and a sprinkle of cinnamon.

Storage
These waffles can be stored in the freezer for future use. Once cooled, place them in an airtight container or ziplock bag and freeze. To reheat, simply pop them in the toaster until heated through.
